Karen, leeks look like giant green onions. They have a mild onion type flavor.
Ruth, it sounds like your "fudge" has too much liquid. I would just try
cutting back on the soymilk some. What I would do is mix the dry
ingredients and vanilla, then add in soy milk gradually until just
moistened. (Aim for the consistency of very stiff frosting). Microwave from
there. Keep track of the amount of soymilk you added. If the final product
is too soupy, add less the next time. Good Luck
