Dry Beans

I looked up the conversions in Food for Fifty, my trusty source for
institutional foodservice. What I found was that 1 pound of dried beans
equals approximately 2-3 cups of dried beans and when cooked will equal 6-7
cups. This varies depending on the type of bean. Of course, larger beans
make larger volumes.

Hope this is helpful.
