I had this for dinner today. It was pretty good, and was something
different for a sandwich. You could also stuff a pita with it. I got
the recipe from "Simply Vegan" by Debra Wasserman.
SPICY BEAN SPREAD
1 Cup vegetarian baked beans (I used an 8 oz can of Bush's)
1 Tbsp horseradish (I used 1 1/2 tsp, I'm a wimp)
1/2 small onion, chopped (I used maybe 1/4 cup)
Mash the beans with a potato masher. Add horseradish and onion. Spread
on whole wheat bread with some ketchup and leaf lettuce. Yum! Mine
kept well in a baggie for 5 hours.
