This is for Fran Watts, who was wondering why one "picks over" lentils.
Lentils and other dried beans often (at least in the U.S) contain
clumps of dirt, small rocks masquerading as legumes, and other
extraneous stuff (wheat husks?). The dirt will wash out, and the
husks may provide extra roughage, but the rocks often prevail when they
meet with teeth!
