Chipotle peppers

     Chipotle peppers are smoked jalapenos and come in at least three 
     different forms -- dried, in adobo, and in escabeche.  They're very 
     hot and smoky and add a wonderful flavor to whatever they are used in. 
     They're originally from Mexico.
