Here's a really simple one:
Easy Beans and Rice
1 onion, diced
1 can kidney beans, rinsed and drained
1/4 cup (approx.) salsa and/or: ketchup, diced tomato, tomato paste and water
1 cup cooked rice (leftovers, or instant)
1 can corn, drained
1-4 cloves garlic, minced, or garlic powder
1 TBS (or more) chili powder
1/2 TBS ground cumin (optional)
1/4 tsp prepared mustard (optional)
1 green, red, or yellow bell pepper, diced (optional)
2-4 black olives, diced (optional)
a little water, if needed
salt & pepper
low fat/ff sour cream, for garnish (optional)
Mix all ingredients except rice and sour cream in a frying pan, and cook
briefly on medium heat until all ingredients are warmed through. Add cooked
rice and cook for a few minutes to blend flavors. Garnish with sour cream
(optional).
