ReL Sweet Potato Recipes

Hi,

Here are a few non-sweet recipes using sweet potatoes.  You can also
substitute them for white potatoes in kugels and casseroles.

       ROASTED SWEET POTATOES WITH WHITE POTATOES AND OPTIONAL GAR

  Amount  Measure       Ingredient -- Preparation Method

   5      pounds        sweet potatoes
   3      pounds        white potatoes
                        olive oil spray
   1      head          garlic -- in cloves,opt.
                        salt
                        pepper
                        dried thyme or other dried herbs OR
                        paprika

Slice the sweet potatoes and the white potatoes.  Put the potato slices
and the optional garlic in a long dish with sides (Pyrex works well.) Spritz
them with olive oil or
drizzle the olive oil over the potato pieces and toss them.
Spinkle with  spices and put in a 450 degree oven for forty minutes or
until they are lightly crispy.

If you roast the garlic with the potatoes, you can either peel it or leave
it unpeeled.  The garlic taste will get into the potatoes in a nice way.

                        SAVORY SWEET POTATO STICKS

   3      medium        sweet potatoes -- about 1 1/2 pounds
   3      cups          Rice Krispies? -- crushed to 3/4 cup
     1/2  teaspoon      garlic salt
     1/4  teaspoon      onion salt
     1/8  teaspoon      cayenne pepper
     1/2  cup           all-purpose flour
   2                    egg whites
   2      tablespoons   water
                        Vegetable Cooking spray

1. Wash potatoes and cut lengthwise into 1/2-inch
slices. Cut slices into 1/2-inch strips. Set Aside.

2. In shallow pan or plate, combine Kellogg's r Rice
Krispies cereal and spices. Set aside. Place flour in
second shallow pan or plate. Set aside. Beat together
egg whites and water. Set aside. Coat potatoes with
flour, shaking off excess. Dip coated potatoes in egg
mixture, then  with cereal mixture. Place in single
layer on foil-lined baking sheet coated with cooking
spray.

3.Bake at 400?F about 30 minutes or until lightly
browned. Serve hot with salsa, if desired

                           SWEET POTATO GNOCCHI

   2      pounds        sweet potatoes
   1      cup           whole wheat pastry flour
     1/2  teaspoon      salt


Boil potatoes and mash.  Add salt and gradually add enough flour to obtain a
manageable dough.  Roll inot 3/4" thick ropes.  Cut into 3/4" pieces.
Make desigh on each with fork tines.
Boil 4 quarts of salted water, and cook gnocchi for about 10 minuttes.  Drain.

Since sweet potatoes can be stringy, mash by passing through a ricer or
if mashing by hand chop first.

                      Two Potato Topped Cottage Pie

   5      Medium        Kohlrabi -- peeled & chopped
     1/2  Cup           barley
   1      Each          Onion -- chopped
   1      Rib           Celery -- sliced
   1      Each          Carrot -- diced
     1/2  Cup           Mushrooms -- chopped
   2      Teaspoons     Basil
   2      Teaspoons     Parsley
                        Salt & pepper
     1/2  Cup           Red wine
   1      Cup           vegetable broth
   2      Cups          potatoes -- Mashed
   2      Cups          sweet potatoes -- Mashed

Place all ingredients, except the potatoes, in a large saucepan & bring to
a boil.  Cover, reduce heat & simmer until the vegetables & barley are tender,
about 45 minutes.  Preheat the oven to 350F.  Transfer the cooked mixture
to a lightly oiled casserole dish & top with alternate diagonal rows of both
kinds of potato. (For a more decorative look, try piping the potatoes).
Bake for 35 to 40 minutes or until the edges bubble & the potatoes are golden
brown.  Serve immediately.
