Veggies & Lentils

1-2 cups lentils
4 1/4 cups water per cup of lentils
pearl onions
carrots (cut matchstick style)
celery
Basil, tarragon, bay leaf or any combination that is your favorite
fresh chopped tomatoes

Put ingredients in a pot and cook until lentils are done. That's it!
Great alone or served over brown rice.
