I was craving gingersnaps, and all the ones at the grocery
were too high in fat, so I made my own:
Fresh Ginger Cookies
1 cup whole wheat flour
1 cup flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cloves
3 Tbsp. minced fresh ginger
1/4 cup fat substitute (I used Lighter Bake)
2/3 cup sugar
egg substitute for 1 egg (I used egg stuff in the carton)
2 Tbsp. molasses or dk. corn syrup (I used blackstrap molasses)
1 1/2 Tbsp. sugar
3/4 tsp. cinnamon
Mix flours, soda, salt and cloves in large bowl. In small bowl,
combine fat sub. and sugar; mix in egg sub. Add molasses and
ginger. Mix wet ingredients into dry ingredients. Refrigerate
dough at least 2 hours. Combine sugar and cinnamon. Roll dough
into balls, then in cinnamon-sugar. Place on sprayed cookie
sheet; flatten with fork. Bake at 350 for ~9 min. This made
two dozen for me.
