Whole wheat pastry flour is made from soft wheat; plain
whole wheat flour is made from hard red winter wheat.
The pastry flour produces a "softer" texture in baked
goods. My favorite thing lately is to use the pastry
flour in my breadmaker. It makes "cakey" bread. Yum!
