This is great for hot summer days.
For vegan gelatin, here is the basic:
into a saucepan--
1 quart fruit juice
4 tablespoons agar agar flakes (see below)
stir to disolve, bring to a boil, reduce to a simmer and simmer 2 - 3
minutes.
Add fruits and pour into a shallow dish, chill.
Note, this may not be quite a firm as Jell-o, but it really tastes good.
Agar agar is a sea vegetable, it is a bit pricey but worth it for this
treat.
Here is the recipe for jelled Waldorf Salad
1 quart apple-cherry juice
4 tablespoons agar agar flakes
bring to a boil, simmer 2 - 3 minutes.
Add 2 apples, chopped small
2 - 3 stalks celery, sliced
Stir in and pour into a shallow dish, chill.
