I saw this in the paper the other day - haven't tried it, but it's from one
of the best restaurants in town & looks pretty good!
Sweet Lorraine's Vegetarian Irish Stew (adapted)
2 cups carrots, peeled & sliced
2 cups leeks or onions, diced
1 cup parsnips, peeled & diced
1 cup sweet rutabaga, peeled & diced
2 cups green cabbage, shredded
1 cup barley
1/2 teaspoon red chili peppers, crushed
1 tablespoon sweet paprika
1 (46 ounce) can tomato juice
1/2 cup brandy or Irish whiskey (optional)
1/2 teaspoon salt (optional)
1 tablespoon sauteeing liquid (veggie broth, water, etc. - your choice)
(1) Heat sauteeing liquid in a large pan, add leeks & barley. Saute until
leeks soften, then add tomato juice. Stir and bring to a boil.
(2) Add remaining ingredients except brandy & salt. Cover; lower heat to
a simmer. Cook until vegetables are tender, about 30 to 40 minutes.
(3) Add brandy and salt to taste.
Serves 4 to 6 generously.
Meal suggestions: Serve with roasted garlic, mashed potatoes and scones
(they suggest cheddar cheese - maybe there's an a good FF scone in the
archives??)
