Lee Ann asked:
>How does sourdough replace yeast? I thought you still needed yeast...
Hi Lee Ann, Sourdough is the process of fermenting a bit of flour and
water. The fermentation comes via naturally occuring yeasts which are
airbourne. Hence you have soudoughs from around the world with the most
famous one being the San Francisco variety.
