I read in one of Dr. Gabe's books about a way to avoid flatulence from
dried beans:
Put the beans in a large pot and cover them with water. Bring it
to a boil and then remove from heat. This breaks the capsules around the
beans and allows the gas-causing sugars to escape into the water. Stir a
couple of Tbs. of baking soda into the water and then soak the beans
overnight or as you would normally. Before cooking, drain the beans and
rinse several times (do NOT eat the soaking liquid).
