Maralyn, you must be thrilled to find so many mysterious talked-about items!
My absolute favorite (or should I say ONLY) way to prepare acorn squash is
ridiculously simple. Slice the squash in half lengthwise and scoop out the
seeds and other slime in the center. Microwave on HIGH for 6-7 minutes,
depending on the size of the squash. While it's nuking, chop up a nice, tart
apple (lovely, green granny smiths are my apple of choice for everything,
don't know if you have them there). When the time is up, fill the cavity in
each half of the squash with the chopped apple, sprinkle with sugar and
microwave on HIGH for another 6-7 minutes. I always mean to do something else
with it but we like this too much!
I agree with Jane about the liquid smoke - makes things tasty a bit 'meaty',
even though it should make it taste like bacon. I add it to my soy dishes and
soups, but sparingly.
Birds eye chilis are supposed to be seriously HOT, so use gloves and handle
with care...I love hot food, so I would probably add them to everything except
breakfast! <wink>
Sweet potato? How about peeling, dicing, and cooking in some orange juice and
a pinch of sugar, served over brown rice? YUM! Have fun!
