We had this for dinner last night, and I was almost surprised that my
husband liked it since he usually thinks anything with lentils is bland.
However, I used very highly seasoned croutons which I made with leftover
herb bread I made last weekend and they added a lot of flavor.

Lentil Rice Loaf

1 cup cooked brown rice
1 cup cooked lentils
1/4 cup egg beaters® 99% egg substitute
1 teaspoon salt
1/2 cup finely chopped onion
2 tablespoons water
1 cup croutons (highly seasoned)
1 cup tomatoes (pasta style), canned
1/4 teaspoon thyme
Put all ingredients into casserole and bake at 350 degrees for 35 minutes.
(Casserole can be sprayed with garlic flavored vegetable oil, if desired.)
