Jan,
I made some vegan lasagna last week with tofu instead of cheese, and it
came out great! Just go about making the lasagna like you normally do, and
just mash up some firm tofu with a fork, throw in some basil, oregano, and
garlic, and use it the way you would cheese. For the "top" I just
sprinkled on some bread crumbs....came out great!
