In response to how much yeast to use. 3 tsp is a bit high. However if you are making a bread with
"heavy" ingredients, ie; whole wheat flour, oatmeal, banana puree, you might need to use extra
yeast. Other possibilities for a fallen top are too much sugar, too little salt or too much
liquid. Sugar encourages yeast growth, salt inhibits it, too much water can make the loaf too
heavy. If fruit purees are used, they contain sugar, so be sure not to add too much extra sugar,
if any. And you MUST add salt no matter what.
