Here are two recipes adapted from traditional favorites, for no fat bread
machine bakers.
Tassajara Summer Swedish Rye
2 cups white flour 1 cup milk (room temp)
1 cup rye flour 1 and 1/2 tablespoons honey
1 and 1/2 teaspoons salt
1 teaspoon caraway seed 1 tablespoon plain n/f yogurt
1 teaspoon anise seeds
l teaspoon grated orange peel
1 and 1/2 teaspoon active dry yeast
Add, first wet ingredients, then dry, then yogurt in corners on top, and then
yeast in well in top. I use medium color white bread setting.
Challah
3 cups white bread flour
l cup liquid (water with about 1 egg worth egg subsitute)
1 and 1/2 teaspoons salt
l and 1/2 tablespoons sugar
l and 1/2 tablespoons non-fat plain yogurt
1 and 1/2 teaspoons active dry yeast
Set on dough setting and process
Remove dough from machine, divide into 3 braids abd braid into loaf on floured
board, pinch end of loaf together.
Let rise on cookie sheet l hour, covered with clean towel
Brush with egg subsitute
Bake 35 minutes at 400 degree (preheated oven)
Remove to cooling rack
