For Joan in Bangor, WI; I don't have a recipe for Callaloo Soup but the
following may help with seasonings etc. Patty in AZ
Callaloo and Rice Serves 6
(If callaloo is unobtainable substitute fresh spinach or Swiss chard)
2 cups unprocessed white rice
1/2 lb. callaloo
1 small onion, sliced
1 clove garlic, chopped
1 lemon, sliced, including peel
1 large tomato, quartered
Combine all of the ingredients with 4 1/2 cups of water and bring to a
boil. Cover the pan and simmer gently for 30 to 40 minutes, or until the
rice is tender.
