hi all!
to carli, who was asking about what types of brown rice to try...i,
too, wanted to try brown rice
again. i had tried it about a year ago and didn't like it. so this
time, in an adventurous mood, i bought success brand boil-in-bag
brown rice. cooked up in 10 minutes and was very yummy! i mixed one
package with half a can of kidney beans and half a can of sweet corn,
seasoned it with cumin (i love that stuff!), chili powder, and garlic.
hubby and i ate it with some ff cheese. yum! and very quick, too.
there is 2g of fiber, 4g protein, and 1g of fat per 1 c prepared rice.
for michele, who wanted a couscous recipe...i posted this a while ago
but it hasn't made it into the archives, so i'll post again. i love
this recipe, it's very good and very easy, and makes tons of
leftovers (unless you have a very large family <S>)! i freeze half
of it to defrost on a night when i *really* don't feel like cooking.
this could also be halved, if you don't want as much leftovers.
couscous and lentil casserole
2 1/4 lentils, washed and picked over
2 carrots, diced
1/2 onion, diced (that's 1/2 an onion, not 1/2 cup)
1 clove garlic, minced
4 c water
pinch coriander
1/2 tsp cumin
cook for 30-40 minutes, or until lentils are tender. drain excess
water, but save some to mix into the casserole.
1 pkg whole wheat couscous (fantastic foods brand) or 2-3 c bulk
couscous
1 1/2 c veggie broth (1 can)
1 1/2 c water,or your choice of combos to equal 3 c liquid
bring liquids to a boil, add couscous. remove from heat and let sit
for 5 minutes.
turn couscous into lentils, and mix well. serve with ff/soy parmesan
cheese, molly mcbutter, extra spices, whatever. :) enjoy!
