This fast, easy-to-make recipe works for me everytime I need some fresh
bread and don't have time to make it.
1 cup whole wheat flour
1/2 tsp salt
1 heaping tsp yeast
1 Tbs sugar (honey, maple syrup, or table sugar)
1 Tbs vital wheat gluten
4 - 5 oz warm water
Toss all dry ingredients into a food processor or knead by hand. As soon as
you've got a good dough, cover with a moist towel and let rest for a few
minutes.
Divide into equal parts, roll into balls, flatten with a rolling pin and
place one to two rounds in a dry (no fat, please!) frying pan until the top
starts to puff. Turn over, flatten with a spatula. Heat for 30 seconds or
so, remove from heat, place the next round or two and continue until all are
done.
Yields about a dozen rounds. If you do them "just right," you can use them
as a peita.
