I too use the Amazing Corn Bread recipe all the time--thanks to the
originator. I like to spice it up though--I ususally dice up two fresh
jalepenos and toss them in. During Cheap Red Pepper Season--I will dice
some and toss in a little bit also, not too much, though. I like a
drier corn bread, so I don't use the cream corn--I just toss in a big
handful of frozen corn and it works out just fine. Sometimes I put it
in muffin cups. If I have planned ahead for company or persons who eat
a SAD diet I will throw in some cheese in their muffin cups--they seem
to like that goo factor. I just can't leave a recipe alone... :-)
