I just found a recipe in a booklet that I sent away for and I've been
dying to try it. The booklet is for recipes of "Quark" which is very
much like fromage blanc in France. It is also like plain yogurt, but
less liquidy, and much less sour. If I were to try to get the right
consistency and taste using yogurt to mimic quark, I would strain it
a little, and add a little sweetener. Having said that, I'll print
the recipe with the "quark" ingredient. The hardest part for making
it nonfat is finding an appropriate crust. I have never seen nonfat
graham crackers in my store.
2 cups (16 oz) nonfat quark
3/4 cup sugar
1/4 cup nonfat milk
1/2 cup key lime juice or regular lime juice
1 envelope unflavored gelatin
1 prepared 8" graham cracker crust
Kiwifruit slices, garnish, optional
In a small saucepan mix sugar, milk, lime juice, and gelatin. Stir
over low heat to dissolve sugar and gelatin. Remove from heat and stir
in quark. Mix well. Pour quark mixture into crust. Cover and refrigerate
until chilled and firm, about 2 hours. Garnish each slice with kiwifruit
slices.
