Most of us are willing to "make do" in order to eat more healthfully, but
I've found that some recipes actually taste better when fat is omitted:
e.g., Mediterranean Lentil Salad, Emily's Cabbage Salad, Tabouli,
Mississippi Caviar, and Oven-Baked Sweet Potato "Fries." (I think all of
these were posted to the list last year; all but one has lemon juice as an
ingredient.)
Friends and family have commented on the improvement in some of the
familiar foods, so it's not just the change in my palate. Have others
discovered recipes for which omitting oil or butter as an ingredient has
*improved* the taste?
