Hi, all,
Hope everyone (yes, dear lurkers, you are included!) is doing well and growing
even healthier this new year. Charter member of the Lazy Cooks Club here with
something I whipped up and ate too much of because it just hit the spot! It's
along the same lines as Broccoli and Cavatelli but a little more vague, lol.
Spinach and carb?
2C broth
2/3C your favorite grain
1 10oz package frozen spinach, thawed but not drained
1t lemon pepper
1t garlic powder
large pinch of mustard powder or wasabi powder
Cook the grain in the simmering broth for the recommended amount of time, or
just cook up a cup of whole wheat pasta instead - whatever carbohydrate you're
in the mood for. When done, add the rest of the ingredients (I love highly
spiced food, so please start with less of each and season to *your* taste),
mix well and enjoy. The wasabi was an act of desperation - I found I'd run
out of mustard and couldn't see the dish without something a little biting.
It worked and I enjoyed the leftovers at lunch today. Thank goodness for
Breath Asure! <giggle>
