One of the women in our office had to teach about eggplant. She had never
cooked it before, which did present a challenge. <g> She looked at
several recipes and came up with this stew, which is delicious. My
daughter doesn't like eggplant, but took the recipe back with her!
Eggplant Stew
1 eggplant
2 cans stewed tomatoes
chopped onion
1 garlic clove
1/2 tsp. smoke flavoring
1 package frozen corn
Peel and cube eggplant. Water saute onion and garlic until tender. Add
eggplant and tomatoes. Heat until eggplant is tender, then add the corn
and smoke flavoring. Heat through and serve. Great hot or cold!
