Now that all this fresh fruit is available I was feeling sorry for myself
because I wanted cobblers and thought it was impossible with a very low fat
diet. I have a great recipe for a cobbler which is done in the microwave.
Nancy, another poster here on the ffd, came up with the topping recipe which
she found in the Secrets Of Fat Free Baking. Between the two of them we
think we have a winner! Any fruit filling can be used as long as it is
piping hot and ready to go when you add the topping.
Nancy used yogurt in her topping and I used buttermilk and both came out
excellent. The one change I would make with the topping though would be to
cut back on the liquid so you would have a stiffer batter which could be
spooned out into individual dumplings.

Peach Cobbler Filling

1/3 cup packed brown sugar
1 tablespoon cornstarch
1/4 teaspoon pumpkin pie spice
1/2 cup water
3 cups sliced fresh peaches
2 teaspoons sugar
1/2 teaspoon ground cinnamon
In 2-quart casserole, combine brown sugar, cornstarch, and pumpkin pie spice.
Stir in water. Cook, uncovered, at HIGH power for 1 minute, stirring after
30 seconds, till mixture is thickened and bubby.
Add peaches; heat again, covered, at HIGH power for 5 minutes, till fruit
mixture is boiling hot. In the meantime mix the cobbler topping*. When the
fruit is hot, spoonthe topping into 5 or 6 mounds around the edges of the
casserole. Mix the 2 teaspoons of sugar with the cinnamon and sprinkle it
over the dumplings. Cover the casserole and cook on HIGH power for 4 minutes
or til the dumplings are done. Serve with ff ice cream if desired.

Cobbler Topping

Amount Measure Ingredient -- Preparation Method

2/3 cup flour
1/3 cup oat bran
1/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup buttermilk
Mix dry ingredients together. Add buttermilk and stir until just blended.
Pour over hot fruit base and bake in oven at 350 degrees or the microwave
on high (about 4 minutes) until the dumplings are done.

NOTES : I would cut back on the amount of buttermilk to make a batter that
can be spooned out in definate lumps.
