My favorite use for those over abundant zukes is to pick
them while they are fairly small, and using one for each
person, grate them into a salad bowl, lining this with
grated carrot, adding cherry tomato to the center and
topping with your favorite fatfree dressing. You have to
be quick about getting this from the counter to the table,
though, since the zukes get watery if you don't.
Call it Bird's Nest Salad and enjoy!
