Flax seeds can be used as an egg white substitute (as a binding agent, not
leavening). Put 3 tsp. of flax seeds in 1/3 cup of water, bring to boil,
then simmer 5-7 minutes until gel-like substance forms.
(Makes 1 egg subsitute).
You can then strain the seeds out of the gel, or leave them in.
