MANGO MADNESS

	
I Love Mangos 
Only wish there wern't such a big, flat seed in the middle of each juicy
delicious fruit !
Good thing there is tho-because otherwise I would probably belly ache myself
by eating to many.
Hope you are all enjoying a wonderful week.

	mango vegetable curry		

	2 medium red onions, sliced	
	4 cups eggplant, unpeeled, diced 1/2" cubes
	4 cups zucchini, sliced 
	2 cups red bell peppers, sliced
	4 medium garlic cloves, crushed
	1/2 cup mango chutney 
	1/3 cup flour 
	8 tsp. ground cumin 
	1 1/2 tbsp. curry powder
	4 cups water
	salt & freshly ground pepper to taste

Directions	In a non-stick skillet on medium heat, water sautee onions
and eggplant  5 minutes. Add zucchini, red bell peppers, and garlic and
saute 5 minutes more. Push vegetables to sides of pan and add the chutney to
the cleared center of the pan. Add flour, cumin, and curry powder and mix
well.Add water and toss vegetables. Cook until sauce thickens, about 1
minute. Add salt and pepper to taste. ~Vegetarian Cuisine


	SQUASH HALVES WITH MANGO
	2 acorn squash, halved & seeded 
	1/2 cup chopped mango
	1/2 cup chopped plums 
	1/2 cup seedless grapes
	2 tbsp. brown sugar
	1/2 tsp. curry powder

Directions	Place squash halves, hollow side up, in microwave dish.
Cover loosely with plastic wrap and cook at high 8 minutes or until tender.
Combine mango, plums and grapes and fill squash halves. Sprinkle with sugar
and curry powder . Cover loosely with plastic and microwave at high 3
minutes. Let stand 3 minutes before serving. 



	MANGO BAKED SQUASH 
makes 2 servings
		
	
	1 butternut squash, peeled & cut in 1/2" slices
	1 cup mango slices
	1/4 cup brown sugar or substitue
	3 T butter bud sprinkles	
	1/4 tsp. cinnamon
Directions	Arrange squash slices in microwave dish. Place mango slices
over squash. Combine remaining ingredients and spoon over squash. Cover with
plastic wrap and microwave at medium 10 minutes or until done. Let stand 3
minutes before serving.
