Russian Vegeterian Recipes

Hi,

I'm a vegeterian and am having an important :-)) dinner guest that is a
Russian non-veg for dinner.

What do I cook to impress him with my genius? Any recipes would be
greatly appreciated. I do know that he does not have dairy.
