wonderful in warmer spring and summer weather :

Black Bean Salad

1 can black beans -- rinsed and drained
1 cup frozen corn kernels
1 whole red pepper -- diced
1 large sweet onion -- diced
1 cup cilantro leaves -- chopped
1/4 cup fresh lime juice
1 teaspoon fresh ground black pepper
1 whole mango -- peel and slice
fat free corn tortillas
chipolte salsa (Arriba brand is excellent)
Combine first seven ingredients in a large bowl and mix gently to combine.
Chill until ready to serve. At serving time, put bean salad on a serving
plate lined with lettuce. Garnish with mango slices.
Serve with warmed corn tortillas and chipolte salsa. We love Arriba brand
chipolte salsa. It has a smokey flavor, excellent with the salad.
