Here's another version of Texas Caviar. I was surprised I actually liked
the hominy, it was my first taste of it.

Texas Caviar

Amount Measure Ingredient -- Preparation Method

16 oz picante sauce -- medium or hot
32 oz blackeyed peas, canned
16 oz hominy, canned
1 cup green pepper -- diced
1 cup white onions -- chopped
1 cup fresh tomato -- chopped
1/2 cup cilantro -- finely chopped
1/4 cup jalapeno -- seeded and chopped
1 cup green onion -- chopped, with greens
1 tablespoon sugar
1 tablespoon salt
2 tablespoons black pepper -- coarsely ground
2 tablespoons cumin powder
Mix all ingredients together and marinate in refrigerator for 24 hours.
Serve with tortilla chips or crackers.
