hi. i have been on this list for about six months and have been
completly silent so this is like a big step for me or something. my
name is jen and i'm 18 and enjoy all the wonderful recipes that i get
here. being a vegetarian teenager during this time of grease loving is
very hard. but anyway i was writing in response to the person who asked
about barbquing recipes. last week i made some delicious vegetable
kabobs.
ingredients
1 green, red and yellow pepper
1 pint cherry tomatoes
2 medium zuchinnis
1 medium eggplant
1 small red onion
2 cups (approx) FF Italian salad dressing
2-3 gloves garlic, minced
Soak approx. 15 bamboo skewkers in water. Mix together minced garlic
and salad dressing set aside. Cut all the vegetables in 2" chunks and
soak in pan with dressing and garlic. Let swekers and vegetables soak
for 1/2 hour.
Put the veggies on the skewers and barbque for approx. 15 minutes
turning frequently to avoid buring. They will be done when they have
grill marks and appear to be steaming. While turning brush with
marinade left overs.
These are extremely delicious and it was easy to add meat to the kabobs
for the non-vegetarians in my family.
