Wash greens. Slice into smaller pieces (some of them can be huge!)
In a big pot, fry* some chopped onion. When it starts to brown,
add the greens and put in 2" of water and a splash of soy sauce.
Stir and reduce to simmer. Cover and cook 5 to 10 mins.
Serve.
Greens reduce a lot, so don't be surprised.
They are very nice when julienned and put into soups during the last half
hour of cooking.
* I mean 'fry' in a fat free type of method.
