Julie, you probably didn't do anything wrong at all. Fat is what gives
cookies that tender crumb or the crispy texture that we all love. It can be
approached, but not duplicated, without the fat. Fatfree cookie-baking is a
long-term adventure, tweaking recipes and trying to achieve the perfect
result. :-)
