thought i'd share the soup i just made. sorry the amounts are not exact,
but that is my cooking style. it made huge pot. i had three small bowls
for lunch and will serve it for dinner tonight. hot soup is the only thing
i like about cold weather. --lisa
lentil barley soup
3/4 cup lentils
3/4 cup barley
1 onion, chopped
1 15oz can tomatoes and juice, chopped up a bit
1 15oz can tomato sauce
dried parsley, oregano and garlic powder
1 15oz can vegetable broth
1 10 oz frozen chopped spinach, unthawed
some chopped carrots
i threw it all in a pot and simmered, covered for 45 minutes. that left it
a bit crunchy. i like my veggies crunchy, but if you like mooshier carrots,
cook it longer.
