Autumn Harvest Stew

This was entered in the Lone Star Vegetarian Chili Cook-Off on October 10,
1999.  It is absolutely wonderful, but I don't think it's really chili, so
I renamed it!  Thanks to Rosie in the Austin Vegetarian Society for this
recipe!!!  Enjoy!

AUTUMN HARVEST STEW
2 C. onions
2 Tbl. sauteeing liquid
1 C. chopped celery
1/4 C. garlic
1 Tbl. blackstrap molasses
28-oz. can diced tomatoes
16-oz. can mashed pumpkin
3 C. beans
1 C. water
1 C. chopped sweet potato
1 C. white hominy, not drained
1 1/2 tsp. salt
1 1/2 tsp. cumin
1 1/2 Tbl. chili powder
1 tsp. crushed chiles
1/4 tsp. fenugreek
1/4 tsp. coriander
1-2 tsp. ginger powder
1/8 tsp. asafoetida powder
juice of 1/2 lemon

Sauté onions in liquid until softened.  Add remaining ingredients except
lemon juice and cook.  Add lemon juice.  Cook until thick and sweet potato
pieces are soft.
