Yes! The recipes both require a 9" Grapenuts crust (1 1/4 cups grapenuts
plus 1/8 to 1/4 maple syrup or whatever binder you prefer.) I hadn't heard
of sweet potato pie until last year, (might pumpkin pie might be more
popular north of the U.S. border?) but it has become a favourite of mine
now. This recipe has been modified, and is delicious.
Sweet potato pie
1 grapenuts crust
egg substitute equivalent to 2 eggs (I used EnerGee powder)
1 1/2 cups cooked, mashed sweet potato
1 1/4 cup skim milk
3/4 cup packed brown sugar (I used white Splenda substitute and it worked
beautifully!)
1 tsp cinnamon
1 tsp EACH allspice, cloves, nutmeg.
Preheat oven 425F. Combine all the filling ingredients and pour into the
crust. Bake 15 minutes, reduce heat to 350F and continue baking 40 min
until set. Serves 6-8.
Here's another one I make frequently.
Apple Pie
1 grapenuts crust
Filling
5 apples, sliced
1 Tbsp lemon juice
3/4 cup sugar
1 Tbsp flour
2 tsp cinnamon.
Topping
1/2 cups rolled oats
1/4 cup flour
1/4 cup sugar
1 tsp cinnamon
3Tbsp applesauce or plain yoghurt (both work well)
Toss the filling ingredients together and layer in the pie crust. Combine
the dry topping ingredients and blend in the applesauce with your fingers
until crumbly. Drop evenly over top of pie. Bake at 425F 10 minutes,
reduce heat to 350F, and cintinue baking 35-40 minutes. Serves 6-8.
