Going through some old recipes and found this one, it is really tasty.
Freshly Minted Peas and Potatoes
1 1/2 cup frozen tiny peas
2 heaping Tablespoons fatfree sour cream
2 heaping Tablespoons fatfree mayo (Nayonaise fatfree is good)
2 Tablespoons snipped fresh mint
2 Tablespoons snipped chives
1 tsp. sugar
1 tsp. vinegar
salt, if you like
2 boiled potatoes
Defrost peas and drain, but do not cook them. Combine dressing ingredients
and toss with peas. Add freshly boiled, peeled, and cubed potatoes.
Refrigerate several hours to allow flavors to develop and blend. Line a
small sald bowl withlettuce, mound peas etc. in center. Drop a few capers
over the top and you have a simple little salad or side dish.
