Quick 'n Dirty Chickpea Curry
14.5 oz can diced tomatoes with green chilies or 14.5 oz can diced tomatoes and 1 jalapeno, seeded and diced
10 oz frozen chopped spinach
15 oz can chickpeas (garbanzo beans), rinsed and drained
1/2 cup water or liquid from canned beans (if organic)
1 tbsp minced garlic
2 tsp curry blend
1/3 cup unsweetened dried grated coconut
1/2 tsp salt
1. In large saucepan, combine all ingredients.
2. Reduce heat to medium and cook for about 5 min.
3. Break up block of spinach with fork, cover and cook about 5 more min.
4. Serve over boiled basmati rice
