This is a good soup that is the basis for one of those quick weight-loss
programs. I didn't do the program, but I made the soup. I will probably
add potatoes and a variety of beans the next time I make it to give it a
better nutrtional balance.
1 bunch celery, sliced. I included the leafy parts.
1 large head cabbage, shredded.
2 pounds of carrots, cut in small chunks.
2 large green onions. (I used the whole bunch since I wouldn't be using
them for anything else soon.)
1 package Liption onion soup mix.
2 large cans broth. (I'm not sure on the ounces, but it's the really big
cans.)
2 large cans crushed tomatoes. (I think they're the 28 ounce size.)
Crushed garlic or garlic powder to taste.
2 teaspoons oregano.
A sprinkle of red and black pepper. (Use a very small amount -- even though
this is a large quantity of soup, the spices go a long way.)
Place cut-up veggies in large soup pot (at least 12 quarts). Add tomato,
broth and enough water to cover the veggies. Add the spices, stir and bring
to a boil. Simmer for about 40 minutes or till veggies are tender.
