Here's an AWSOME recipe I make, using any berry or chopped up fresh fruit.
It's great with blueberries!
Quick Berry Cobbler
1 cup flour
1 cup sugar
1 cup skim milk
3 tsp baking powder
1/2 tsp salt
8 oz any berry (I've used blueberries, strawberries, cherries, and even
chopped apple.)
Combine ingredients and pour into a casserole dish. Bake at 350F for 30 min.
I just found this recipe in Pete Luckett's "Fresh Fruit and Vegetables"
book. I haven't tried it, but the filling looks nice. I've modified the
'shortcrust pastry' part!
Cranberry- blueberry pie
2 cups cranberries
2 cups blueberries
3/4 cup sugar
2 Tbsp cornstarch
1/4 tsp nutmeg
2 Tbsp grated orange rind
grapenuts pie crust for a 9" pie plate
Mix the filling ingredients in a bowl and pour into the grapenuts pie shell.
Bake at 425F for 15 min. Reduce heat to 375F and bake another 35 min.
Serve witha dollop of ff sour cream flavoured with a touch of Cointreau.
