Someone wanted recipes for pie shells. Found this in an old Betty Crocker
cookbook.
Heat oven to 275 degrees. Generously butter 9-inch pie pan. (A substitute
would probably work fine.) In small mixer bowl, beat 2 egg whites (1/4 to
1/3 cup) and 1/4 teaspoon cream of tartar until frothy. Beat in 1/2 cup
sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do
not underbeat. Pile into prepared pan, pressing meringue up against side
of pan. Bake 45 minutes. Turn off oven; leave meringue in oven with door
closed 45 minutes. Remove from oven; finish cooling away from draft.
