I just bought "Healthy Crockery Cooking" by Mable Hoffman. Most of the
recipes have meat but there is a section of Grains and Beans and others can
be adapted. You may want to see if your library can get it for you if they
don't have it. It was published in 1998 by The Berkley Publishing Group, 200
Madison Ave., New York NY 10016
BARBECUED PINTO BEANS 6 to 8 servings
1 pound dried pinto beans, sorted and rinsed
3 cups water
1 onion, chopped
1 green bell pepper, chopped
1 jalapeno chile, seeded and chopped
1 (18 oz.) bottle barbecue sauce
1/4 cup molasses
1/4 tsp. salt
Combine all ingredients in a 3 1/2 quart slow cooker. Cover and cook on HIGH
8 to 9 hours or until beans are tender.
