Here's a soup I used to take to work. It is so fast that if I started it
when I started my coffee, it was done just before I left home.
What you need:
1 cup lentils (any color)
1/2 medium yellow onion, chopped
2 - 3 cloves garlic, minced
1 medium carrot, diced
1 stalk celery, diced
about 2 cups of water
Options: curry powder, one or two slices of diced potato, whatever else you
think might be good. This is a very forgiving recipe.
What to do with what you have:
Bring the water to a boil.
Carefully pour the lentils into the water, then stir.
Add the veggies.
Turn to a simmer, cover, and do whatever you do for about 25 to 30 minutes.
It's done.
Now pour it into a vacuum container and take it to work for a virtually
fat-free lunch. I sometimes added a few drops of dark sesame oil for flavor
just before eating it.
