I've used soy flour, and cn vouch for the fact that you *shouldn't*
substitute it one-to-one but only a tablespoon or 2. Yecch! Not fit for even
heffalumps or woozles!
I also did use a small smackeral of silken tofu in place of the fat in a
bread recipe and tasted no difference in the finished product from when I
used butter or oil.
