Spaghetti Squash is a type of Squash :) You bake or steam it, and then..
open it up and the inside ..with the help of a fork.. seperates into strands,
like spaghetti..Eat with your favorite pasta/spaghetti sauce...
From Elizabths Schneiders book "Uncommon Fruits & Vegetables"
To Steam: Halve the squash lengthwise. Scoop out and discard seeds. Halve
each piece lengthwise again then place flesh side down on a steamer rack,
well above the boiling water. Cover and steam until your finger leaves an
indentation in the skin, from 20 - 30 minutes, depending on the state of
maturity ( also assuming a 2- 2.5 lb squash) . Gently pull strands from the
shell until only a thin skin remains.
To Bake:
Prick whole squash with a sharp knife or fork in 2 to 3 places, to prevent
bursting. Place in a pan in a 350 degree oven ( or thereabouts) and bake
until easily depressed with finger, 45 minutes to an hour. Remove and halve
at once, or it will keep on cooking. Let cool briefly, scoop out seeds and
discard. With a fork"comb" strands out
