Another Quinoa Recipe

Here's another one.  Also, if you haven't checked the archives yet, you should.  Many of the quinoa recipes I use regularly were originally posted to this list.

                    Low-Fat Moroccan Mixed Grain Pilaf

  1         tablespoon  water
  1              large  onion -- chopped
  1         tablespoon  ginger root -- finely-chopped
  1              clove  garlic -- minced
  2          teaspoons  curry powder
  1           teaspoon  ground cumin
     1/2      teaspoon  ground cinnamon
     1/2      teaspoon  turmeric
  4 1/2           cups  vegetable stock
  1                cup  pearl barley
     1/2           cup  long-grain brown rice -- uncooked
  1           teaspoon  salt
     1/2           cup  quinoa
     1/2           cup  millet
  2                     carrots -- diced
  1       19-ounce can  chickpeas -- rinsed & drained
  1              bunch  spinach -- (or Swiss chard) thinly-sliced

Saute onion, ginger & garlic in water over med. heat until soft. Add spices & cook 1 min. Stir in stock, barley, rice & salt. Bring to a boil; reduce heat & simmer, covered, 30 minutes.

Rinse quinoa well & add to saucepan with millet & carrots. Simmer, covered, about 20 minutes or until liquid is almost absorbed.

Place chickpeas & spinach on surface of grains, without stirring. Cover & cook 5 minutes or until spinach wilts & liquid is absorbed. Toss together & serve.   6-8 servings.
